One-Skillet Honey Dijon Chicken with Potatoes and Green Beans

  • 4 chicken breasts
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups baby potatoes, halved
  • 2 cups green beans, trimmed
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, mix together honey, Dijon mustard, garlic powder, salt, and pepper.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add chicken breasts and cook until browned, about 5-7 minutes per side.
  4. Remove chicken and set aside. In the same skillet, add potatoes and cook for about 10 minutes.
  5. Add green beans and return chicken to the skillet. Pour the honey mustard mixture over everything.
  6. Cover and simmer for another 15-20 minutes until the chicken is cooked through and vegetables are tender.

Notes

  • For extra flavor, marinate the chicken in the honey mustard mixture for a few hours before cooking.
  • You can substitute green beans with broccoli or asparagus if preferred.
