- 4 chicken breasts
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups baby potatoes, halved
- 2 cups green beans, trimmed
- 2 tablespoons olive oil
- In a bowl, mix together honey, Dijon mustard, garlic powder, salt, and pepper.
- In a large skillet, heat olive oil over medium heat.
- Add chicken breasts and cook until browned, about 5-7 minutes per side.
- Remove chicken and set aside. In the same skillet, add potatoes and cook for about 10 minutes.
- Add green beans and return chicken to the skillet. Pour the honey mustard mixture over everything.
- Cover and simmer for another 15-20 minutes until the chicken is cooked through and vegetables are tender.
Notes
- For extra flavor, marinate the chicken in the honey mustard mixture for a few hours before cooking.
- You can substitute green beans with broccoli or asparagus if preferred.
