  • 1 tablespoon baking powder

  • 1 large egg
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1/4 cup fresh orange juice
  • 1 tablespoon orange zest

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the egg, milk, vegetable oil, orange juice, and orange zest.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill muffin cups about 2/3 full with batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool for a few minutes before removing from the tin.

Notes

  • For extra zest, add additional orange zest to the batter.
