Perfect Hasselback Potato

A delightful twist on the classic potato, featuring savory turkey bacon.

Ingredients

  • 4 large russet potatoes
  • 1/2 cup turkey bacon, diced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 cup shredded cheese (optional)
  • 2 green onions, sliced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice each potato thinly but not all the way through to create ‘hasselback’ cuts.
  3. In a skillet, cook the diced turkey bacon until crispy. Remove and set aside.
  4. In the same skillet, combine olive oil, garlic, salt, pepper, and paprika over medium heat.
  5. Brush the mixture generously onto each potato.
  6. Place the potatoes on a baking sheet and bake for 50-60 minutes, or until tender and crispy.
  7. In the last 10 minutes of baking, sprinkle with cheese and crispy turkey bacon.
  8. Garnish with sliced green onions before serving.
