Pistachio Tres Leches Cake

A luscious twist on the traditional tres leches cake, this pistachio version brings a unique flavor and an indulgent experience to any dessert table.

  • 1 cup finely ground pistachios
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9×13 inch baking dish.
  3. In a bowl, mix ground pistachios, flour, baking powder, and salt.
  4. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  5. Gradually add the dry ingredients to the butter mixture until combined.
  6. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let the cake cool completely, then poke holes all over the surface with a fork.
  8. In a separate bowl, whisk together the evaporated milk, sweetened condensed milk, and heavy cream. Pour this mixture over the cake, allowing it to soak in for at least 2 hours, preferably overnight.
  9. Serve chilled and enjoy!

Notes

  • For an even richer flavor, consider adding some chopped pistachios on top as a garnish.
