  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 can (14 oz) diced tomatoes
  • 2 eggs
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a skillet, cook the turkey bacon over medium heat until crispy.
  2. Remove bacon and set aside. In the same skillet, add olive oil and sauté onion until translucent.
  3. Add garlic and tomato paste, cooking for an additional minute.
  4. Stir in diced tomatoes, paprika, salt, and pepper. Let simmer for 10 minutes.
  5. Make two wells in the tomato mixture and crack the eggs into the wells.
  6. Cook until the eggs are set for your desired doneness.
  7. Top with chopped parsley and serve with the crispy turkey bacon.
