Skillet Greek Lemon Chicken and Rice

A delicious one-pan meal featuring tender chicken and flavorful rice with Greek spices.

  • 1 pound chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped spinach

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken and cook until browned, about 5-7 minutes.
  3. Remove chicken, and in the same skillet, add rice, chicken broth, lemon juice, garlic powder, oregano, salt, and black pepper.
  4. Stir well and bring to a boil.
  5. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
  6. Return chicken to the skillet and add spinach, cooking until spinach wilts.
  7. Serve hot and enjoy!
