Slow Cooker Chicken Cacciatore

This slow cooker chicken cacciatore is a delightful and flavorful family meal that’s super easy to prepare.

  • 2 pounds chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the chicken thighs on both sides and transfer to the slow cooker.
  2. Add onion, bell pepper, and garlic to the skillet. Sauté until softened, then transfer to the slow cooker.
  3. Add diced tomatoes, tomato paste, Italian seasoning, salt, pepper, and chicken broth to the slow cooker; stir to combine.
  4. Cover and cook on low for 6-7 hours or until the chicken is tender and cooked through.
  5. Before serving, stir in fresh parsley.
