Slow cooker Italian lentils with sausages and chilli

A hearty slow cooker dish combining Italian lentils, sausages, and chili for the perfect comfort meal.

Ingredients

  • 1 cup Italian lentils
  • 4 Italian sausages
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 chili pepper, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a slow cooker, add the lentils, chopped sausages, onion, garlic, bell pepper, and carrots.
  2. Pour in the diced tomatoes and vegetable broth.
  3. Stir in the oregano, basil, chili pepper, salt, and black pepper.
  4. Cover and cook on low for 6-8 hours or until lentils are tender.
  5. Serve warm and enjoy your meal.

Notes

  • Adjust the spice level by adding more or less chili pepper.
  • For a vegetarian version, replace sausages with plant-based sausage.
