  • 2 fillets of salmon
  • 4 slices of turkey bacon
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wrap each salmon fillet with slices of turkey bacon.
  3. Heat olive oil in a skillet over medium heat and add minced garlic.
  4. Season the salmon with Italian seasoning, salt, and pepper.
  5. Place the wrapped salmon in the skillet, searing for about 3 minutes per side.
  6. Transfer the salmon to a baking dish, add cherry tomatoes and spinach.
  7. Drizzle lemon juice on top and bake for 15-20 minutes.
