Zucchini Lasagna

A delicious and healthy zucchini lasagna recipe featuring turkey bacon and chicken ham.

  • 2 large zucchinis
  • 1 pound ground turkey
  • 4 strips turkey bacon
  • 1 cup chicken ham, diced
  • 2 cups marinara sauce
  • 1 ½ cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a skillet, cook the turkey bacon until crispy, then remove and set aside.
  4. In the same skillet, brown the ground turkey until fully cooked.
  5. Stir in the diced chicken ham, marinara sauce, Italian seasoning, salt, and pepper.
  6. In a baking dish, layer zucchini strips, followed by the meat sauce, ricotta cheese, and mozzarella cheese.
  7. Repeat the layers, finishing with mozzarella cheese on top.
  8. Bake in the preheated oven for 30-35 minutes until bubbly and golden.

Notes

  • For added flavor, consider adding diced onions and garlic to the meat mixture.
  • This dish can be made ahead of time and stored in the refrigerator until ready to bake.
